Happy Mother's Day to My Amazing Mother!

The family with Mom in the center. Just where she should be!
Some of Mom's/Gramma's favorite people

My mother is amazing! She will be 89 years old on June 11. How amazing is that? After four boys, her parents considered her birth a long awaited blessing, and the truth is that she has been blessing people’s lives every since.

Warning: This is a long post, but let’s face it, if YOU were to write 89 amazing things (I borrowed this idea from Krsitine) about Gramma or Mom, your list would probably contain all of the things I’ve written, plus a lot that I’ve left out.

88. You have so many blessings. Count them often.
89. Just DO what has to be done.

Here's one last SWEET thing to share -- Mom’s fabulous chocolate cake recipe:

Grease and flour a 11x15x2 inch pan (purchase at Michael's). Heat oven to 400 degrees.

Wisk together:
2 cups sugar
2 cups flour
1 tsp soda
1 tsp salt

Bring to a rapid boil:
2 sticks margarine
4 TBLS Cocoa
1 cup water.
Pour over the flour mixture and stir.

Add to above mixture:
1 tsp vanilla
1/2 cup buttermilk
2 eggs.
Mix well together.

Bake for 20 minutes at 400 degrees.

Yummy Yummy Icing:
Heat (microwave) together until melted and blended:
1 stick margarine (or butter)
4 TBLS Cocoa
6 TBLS buttermilk
Add approximately 3 cups of powdered sugar. Add more, if it's too thin. Ice cake while it is still a little warm -- not hot, not cold!

Enjoy!
